I've been eating hummus all week. Help. I can't stop. It all started when I whipped up a big batch of my tried and true favorite, a classic chick pea hummus recipe with tahini and lemon (though in full disclosure, I used lime juice instead of lemon). I munched it as a party worthy snack, with retro bunny carrot sticks as we rewatched some Mad Men episodes in anticipation of the coming season this Spring (sophisticated serial television that just keeps getting better and better, does it not?). Mad Men is a show with keen originality, surprises, and rare insights into sexual politics, power, culture, and marriage- not only enlightening those of us who lived through the sixties (I was- er, am- exactly Sally Draper's age, so many aspects of the show are akin to watching home movies), but connecting the dots that birthed our current consumer pop culture, in all its tarnished glitz and narcissistic glory.

Then I nestled dollops of the stuff on warm and comforting bowls of brown rice and stir-fried vegetables (recovering from said cultural insights, and newly minted wife-slash-copyrighter Megan's saucy rendition of Zou Bisou Bisou).

I ate and I ate.

And then there was no more. I was hummus-less. Without hummus. Bereft. An empty fragile goddess sans my favorite vegan protein complement.

So I began to scheme.

I pined for the opportunity to blog another hummus recipe, but I'd already shared not only my classic style hummus, but my irreverent upstart hummus with jalapenos, lime and peanut butter (which apparently, on some vegetarian forum raised an anti-goddess ruckus). Not to mention, my roasted red pepper hummus, perfect for 'Party On' mode (I hear tell there's a Big Game approaching).

My thoughts did a shuffle play through new and cool possibilities.

And I remembered my raw cashew cream recipe. Why not make it thicker? Why not make it into a hummus style dip? So I did the sensible thing. I soaked some cashews. And guess what?

Raw vegan deliciousness ensued.

I have a confession to make. It begins with crackers. Crunchy, nutty, salty crackers. And the doom of shortening days. The curse of narrow daylight. The long slow creep of SAD and carb cravings has begun. The Fall Equinox is right around the corner. After-dinner walks will soon be pre-dinner walks. The wind that weaves through the cottonwoods down by the Chama riverbed will have a chilly edge to it that hints of winter skies and stirs the urge for goin'. I get that every year. The urge. The longing to clear out, let go and move on.

I feel the gypsy spirit in my bones--- screws and all.

And if I am stuck, as I now am stuck, back in this ancient rural desert where I feel--- screws and all- I don't belong, this urge goes underground. This urge- and it is a she- attempts a guise of humming patience and a veil of vague distraction knowing all the while that this ruse of hers is thin and she will soon be gnawing away at my futile attempts to remain buoyant and calm and satisfied with crudities and lettuce wraps. I will be rifling the cupboard for crackers and tortilla chips and baking starchy potatoes to smother with roasted vegetables and rustling up plates of steaming spaghetti and meatballs.

All to satiate The Need. The carb need. The Fix.

The serotonin impostor.

For those of you blessed with a friendly chemistry, those of you already anticipating the fall and winter holidays with their frosty allure of goodies and gaity, the ice skating and skiing, and the boisterous camaraderie of football- I salute you.

As for me?

I am preoccupied with conjuring lower carb crackers. And tossing up prayers to the wise and (one can only hope) merciful Real Estate Goddess. Maybe she'll take pity on me. If the house does not sell by November, we'll invent Plan B.

Gluten-Free Pecan Cracker Recipe

These crackers taste a bit like rye crackers, due to the caraway and cocoa powder. If you're not a fan of rye bread or rye crackers, leave out the caraway.

Whisk together the dry ingredients:

1/2 cup millet flour or sorghum flour, more as needed*
1/4 cup potato starch (not potato flour!)
1/2 cup GF buckwheat flour
1/4 cup nutritional yeast
2 teaspoons organic cocoa powder
1 teaspoon sea salt
1 teaspoon dried minced onion
1 teaspoon garlic powder
1/2 to 1 teaspoon caraway, to taste
1 teaspoon dried thyme or dried crushed rosemary

Stir in:

1 1/2 cups pecan meal
Ener-G Egg Replacer for 1 egg mixed with warm water
1/4 cup good olive oil
1/2 cup warm water or non-dairy milk, to start
1 teaspoon raw organic agave or brown sugar

Stir the ingredients until a stiff dough forms- you'll need to press the dough out into a thin layer, so if it appears too dry, or it falls apart, add a tablespoon of warm water at a time until the dough is malleable but not too sticky. My dough used almost 2/3 cup liquid- but this will vary according to flours and humidity.

Note*

The second time I made these crackers I needed three extra tablespoons of millet flour to get the dough sturdy and glossy. As always- dough and batters vary slightly with humidity.

Instructions:

When dough is mixed, divide in half.

Preheat the oven to 350 degrees F. Line two baking sheets with parchment or a reusable Exopat.

Using oiled hands flatten and spread half the dough on the prepared baking sheet. Make as thin a layer as possible. Use the edge of a rubber spatula to straighten outside edges, if you like. The thinner the cracker is, the crisper it will be.

Prick the dough with a fork- or not- it's your choice.

Score the flattened dough into cracker sized pieces. I used a pizza cutter to do this.

To bake:

Sprinkle with sea salt or kosher salt, if desired.

Bake in the center of a preheated oven for 15 to 20 minutes till firm and slightly crisp (they will crisp up more as they cool). I use an Exopat, so the crackers baked a little longer- and were done at 24 minutes. Keep an eye on them.

Remove and allow the crackers to cool on a rack.

Store in an air-tight container. Or freeze. If they soften from humidity, reheat them on a baking sheet for a few minutes before serving.

Makes 36 crackers.

Ramblings and Veggie Dip

Living rootless is a mixed gift bag. There are no neighbors who know my history, or my family. Or even my name (unless they happened to glance by accident at the removable punch-label on our mailbox that sports our shared surname, one half of the story). I have no garden to weed. No leaves to rake. No fence to paint. I walk the city block unnoticed (flirting with invisible) in frayed men's Levi's and a four-year old sweatshirt. I do not mind the anonymity. I find it kind. It suits me. Like my faded Converse One Stars.

Craving attention- for me- is like craving bacon ice cream or hot dog stuffed pizza crust or fried chicken in buckets. I simply do not. It's innate. I just don't have an appetite for it. I practiced it endured it in childhood when necessary (for survival). Growing up can be excruciating if dropped into the nest of an extroverted party giver. Performance anxiety will indeed tongue-tie an observant three year old who already understands on some unspoken secret level that the push toward the spotlight is not about her, it's all about the pusher.

So I've never been prone to elevate the art of competition or believe in the religion of winners and losers. Keeping score or handing out awards is as unpleasant to me as sniffing haggis. Competition (when viewed up close and personal) is mental illness. The vigilant urge to be Number 1 or the beeline drive toward fame is a symptom. You can cloak it in a "pursuit of excellence" all you want. It's all an illusion with no more meaning than a pink slime infused wiener-stuffed gob of dough baked with cheese. Time will prove that to you.

In more ways than one.

Who needs ammonia doused pink slime or buckets of greasy fried gluten when you can whip together this light and creamy vegan dip? Serve it with crisp carrot sticks or an array of fresh spring veggies.

Feel good.

Spring Veggie Dip Recipe - Gluten-Free and Vegan

I used sprouted tofu in this vegan-lovin' dairy-free gluten-free veggie dip. Sprouting the soybeans makes them more digestible, apparently.

Ingredients:

1 lb. soft or medium-soft organic tofu
1/2 cup Vegenaise
Juice of 1 fresh lemon
1 clove fresh garlic, finely chopped
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
2 teaspoons chopped fresh mint
1 teaspoon chopped fresh marjoram
Sea salt and ground black pepper, to taste

Instructions:

Drain the tofu (if water-packed) and press the excess water out with a paper towel.

Place the tofu in a food processor bowl and turn it off and on briefly to break it apart.

Add the Vegenaise, lemon juice and garlic, and process till smooth.

Scoop the mixture into a bowl and add the fresh chopped herbs. Season with sea salt and black pepper, to taste. Mix well. Cover and refrigerate for an hour or more to blend flavors.

Serve with fresh carrot sticks and raw spring veggies.


Serves six.

You've heard the news, right? It's all over the blogsphere. And foodie sites galore. Bunny food rocks. Dark leafy greens just might save our lives, so packed are they with deeply needed nourishment and nutrition. And kale! Tuscan kale is the queenly green It Girl.

I resisted her charms at first, I admit. I tip-toed into kale territory last year, with a hefty head of curly kale. And found it, shall we say, a tad, um, swampy. For my taste, anyway. I'm a woman who loves wedge salad, after all, believing (without irony) that a thick slice of crisp, cold iceberg lettuce is the perfect summer vegetable. And highly underrated.

But Tuscan kale- with its long slim elegance (sometimes known as Lacinato or dinosaur kale) has decidedly won my undying loyalty- especially when roasted in olive oil.

And toasted to a crispy crunchy whisper of a chip.

It's like an ugly potato chip. Sans the guilt of a potato chip. You get the pleasing, delicate crunch. Then a burst of briny green flavor. An aftershock of bitterness. Which perks up your taste buds. And if you haven't Botoxed your forehead, may even raise an eyebrow. Or two.

The odd sensation you will feel next is your body murmuring, Thank you.

I'm all for eating local (if it's organic- I can't see the point of chowing down on pesticides for the virtue of having traveled only sixty forty twenty miles to my plate). I'm also prone to eat in tune with the seasons. I sashay right by strawberries in February- with nary a twinge of envy. I ignore tomatoes in January with a disdain worthy of a cane-wagging Dowager Countess.

With one glaring exception.

Those flirtatious little baskets of grape tomatoes- and those shameless, curvy cherry tomatoes. So plump and sweet and brazen. So... come hither. The rosy taste of summer itself.

Beckoning.

And although my winter cravings tingle toward a melting, bubbling, butter soft gluten-free lasagna hot from the oven, I admit without shame I miss the bright, acidic burst of Venus' favorite fruit. And I succumb. I cave like a saddle-shoed Catholic school girl offered a menthol in the girl's room. Without a blink of embarrassment. Because I have a plan, thanks to food blogger Lydia at The Perfect Pantry.

A plan to coax these devilish beauties from their summer vacay glory into the guise of winter comfort food.

I gather them and cradle them in olive oil and toasted gluten-free cornbread crumbs.

I bake them.

As soon as I saw the recipe for Baked Cherry Tomatoes over at The Perfect Pantry I knew I would love it. Tiny tomatoes, fresh garlic, Italian herbs, olive oil, breadcrumbs. What's not to love? It's Mediterranean cooking at it's simplest and most sublime.

I've tweaked the recipe to make it gluten-free, of course. There's not a speck of gluten in my version. But you'd never guess. Which makes this easy-to-create side dish an instant top ten favorite for pot lucks and picnics and any number of anxiety inducing gatherings we gluten-free goddesses fret about.

Serve this heavenly dish without a whisker of apology. Don't even bother mentioning its gluten-free and vegan status. These Italian baked tomatoes are so tasty you'll be asked for the recipe. By gluten eaters. By carnivores. I promise.

In place of plain bread crumbs (a definite no-no for gluten-free folks) I used a wedge of my Yeasted Quinoa Cornbread to make tender golden crumbs that taste like polenta. For the tomatoes I used both yellow and red organic grape tomatoes (to me they're slightly sweeter than cherry tomatoes; but use what you can get in your part of the world; both are delicious baked). And for the oregano I used basil.

I wasn't sure I had another recipe post in me -- before the year of 2010 turns into a pumpkin and rolls backward into the past. I thought I was going out with a year-end Top Ten Gluten-Free Recipes post, catching up with all you gluten-free  lovelies again in 2011. I thought I was done. Spent. Empty as a pocket, to quote a certain singer-songwriter. So much for assumptions.

Turns out my fevered brain wasn't done with 2010. It spun off in party mode as soon as I heard that my oldest son was officially engaged. He popped the question with true romantic flare. On a wine train. In the rain. In Napa Valley. And she said yes. The ring fit. People on the train applauded. It doesn't get much better than this. To witness your son's heart. Blooming.

And so. The year closes. I make a mug of chamomile tea and reflect upon the deepest joys of motherhood, turning their myriad facets toward the window light above the kitchen sink stacked with breakfast plates, cups, and spoons. Learning to love with open arms and a tender opinion, unconditional. This floats to the top of all other joys. The thick cream of it. A layered, rich reward. To love a son expands your heart beyond measure. To see him love, and inspire love, is the most beautiful working of magic.

Crispy Crunchy Homemade Crackers

This is a light, pleasantly crisp cracker that is flaky and tender- and you won't believe it's gluten-free and vegan. The texture is so elegant. Yet. The flavor retains an earthy touch of rustic, with a hint of... Dude. Cue soft focus. Suddenly I feel as if I'm in a varietal wine commercial, tossing my hair back (if I had tossable tresses, that is and not a sensible cheek length bob that refuses to toss) and laughing just so- with a tableaux of my closest, dearest multicultural friends, of course- revealing a gleaming set of perfectly capped teeth as I raise a globe of pinot noir into the rosy glow of a Napa Valley sunset to convey The Good Life.

The life without chin hairs and medical bills and neighbors who don't recycle.

All kidding aside (I don't sport a tableaux of polo shirt wearing best friends and I've never been to Napa Valley or for that matter, capped my teeth or Botoxed my frown lines leaving the perfect hint of crow's feet to crinkle when I smile so that you don't notice my eyebrows are frozen back to 1985) I  just might bake up a batch of these tasty crackers for Oscar night, whip up some Roasted Eggplant Tapenade and pop open a bottle of lovely Veuve Clicquot Brut.

Uh oh.

Sounds so swanky and pseudo-chic again, I know (but really- I've no idea what the subtle variations of brut vs Champagne and méthode champenoise vs méthode traditionnelle are; I could research and report back to you, I guess, using terms like appellation and second fermentation and nose). But.

Maybe you'd rather not know. Maybe you'd rather go with the flow and focus on something tangible, something in the here and now and sitting right in front of you like- a simple cracker recipe- and take my word for it. Veuve Clicquot Brut tastes good. It's pretty tasty with crackers. Grapes. And popcorn, for that matter. This I know.

The rest is all persuasion technique. I looked it up.

Yesterday was summery here in Southern California. In a Meg Ryan breezy kind of way- not in a sultry no air peel off your jeans, cowboy boots and socks Jennifer Lopez in U Turn kind of way. Nope. Sunny and warm it was- but not hot like New Mexico.

We've moved into our sublet (above one of Santa Monica's most famous vegan restos). The Honda is Cuisinart and bread machine and wooden spoon free again- after lugging armloads of bags and boxes (via elevator, thank goddess) up to our cozy fourth floor cutie. Yesterday we walked to the ocean, inhaling deep. In truth? I am exhausted. Running on gluten-free fumes. Too tired to shop or cook or make even the tiniest decision, never mind attempt to be clever and insightful and entertaining in a recipe post.

And so, faithful reader, I hope you'll forgive me for reprising a recipe from my abundant archives. It's a good one. I promise. A delightful roasted eggplant tapenade. Serve it as a spread on wedges of gluten-free focaccia. Slather on your favorite pizza shell. Or add it to hot cooked pasta.

How am I occupying my fevered little brain as we wait (not so patiently) for more house showings? How do I keep my spirits up as we start this selling process all over again? I dream up recipes. I lay in bed at 3 AM with visions of salsa in my head. I conjure excuses for roasting yellow tomatoes.

I imagine frittatas with leftover pasta.

Vanilla cupcakes with mocha icing.

Pecan crackers.

This is my life. And it's ending one recipe at a time.

Sorry to get all Chuck Palahniuk on ya (and I admit up front this isn't a feel good post; though the recipe is party worthy I am in no particular mood to dance). One thing I know for sure is, that beyond a certain age, it becomes startlingly clear. Every season marks a passage, one more season closer to your last. We've spent eight seasons trying to sell this place. Two years out here in high desert isolation. Two summers, two winters trying to shed a mortgage so we can move on. Be near the sea again. Live close to book stores, cafes and Farmer's Markets. Chuck is right on ownership.

What you own ends up owning you.

A woman I used to know would offer platitudes in times like this. There's a reason you were supposed to stay here, she would have said. I always said nothing when she offered that as solace. I don't believe it, you see. I don't believe that the universe cares about my mortgage. I don't believe in a divine purpose that requires our presence here and not there. Have I learned from this experience? (This would be her follow-up consolation.) Yes. I have.

I have learned that ownership may indeed be overrated. That I value freedom of movement more than a piece of paper that names me as Buyer. I have learned that putting down roots may no longer be in my nature. I have learned that my body was not designed for high altitude living. I have learned not to set a speaker on the floor.

And I have learned how hard it really is to escape the template of childhood. Those emotional neural patterns designed in earlier seasons that baffle with their dug-in insistence on repeating, repeating. No matter how many books you read, how many dreams you dissect. Your fate is anchored not by your understanding but by every single snip of authenticity you endured for the sake of one more day. And so I am not anxious to sacrifice much more. I am gripping awareness and holding tight. I am not sure I won't make the same mistakes again.

But I am going to try on a new season. And I am going to hope.

Crackers don't get enough credit. I guess they're not cute enough. Or sexy enough. No swirls of pastel icing. No confetti sprinkles. No tiny ribbons and bows. No Jackson Pollock drips of balsamic reduction or snow pea puree.

Just simple squares.

Ho-hum brown.

Crackers are the wallflowers at the food blogger's party. Too ordinary and unassuming to garner much attention. But there might be a few of you in the same boat I row upstream.

The snack deprived boat.

So this one's for you.

Folks who can consume gluten probably take their snacks for granted. After all, they can grab any bag of chips or cracker box off the shelf of any market or convenience store and motor on over to the cheese section without breaking a sweat. Snack attack solved. Please pass the Doritos.
But for those of us living gluten-free and casein-free- it ain't so easy. (And if you happen to have additional allergies- to sunflower oil or nuts or spices- you get one complicated serpentine quest for a safe little bite.)

At this writing, I can count on one hand the number of available chips or crackers I can eat. Safely. And for some mysterious reason that only the petulant Goddess of the Universe knows, that modest handful of snack options is never stocked. Anywhere.

I search in vain every weekly trip to Santa Fe for the one potato chip I can eat. Or a single non-GMO tortilla chip. Even those funny little white rice wafers play hard to get. New Mexico appears to be staunchly plain rice cracker free (I guess rice crackers don't like to flirt with guacamole and salsa).

Which explains why I bake my own snacks and crackers.

It's a pragmatic choice. I've made Pecan Crackers, and Savory Grain-Free Crackers (back when I didn't know I was allergic to Parmesan). I've made crispy sweet potato and gold potato chips.

But this week we found ourselves crackerless. So we baked up a new recipe on the spot. With garlic and sesame seeds. If you cannot eat sesame, darling, flax seeds or hemp seeds will work.

Before I get to how to cook homemade potato chips and avoid the game we food allergic individuals refer to as Le Chip Roulette, I'd like to mention dreaming. Because I woke from some very strange dreams this morning. Dreams involving caveman chest hair and glistening inky fish and long distance songs on some radio left behind in an abandoned mining shack perfect for a David Lynch location shoot. Spandau Ballet, in fact- crooning, I know this much is tru-hoo.

It's day fifteen of the tenacious head cold I picked up in Los Angeles. And it's Friday the thirteenth. But I'm not so easily spooked. Old ghosts got nothing on this morning's weirdness. This is kindergarten stuff. Amateur hour. So I shook it off and brewed some tea.

I'm blaming high altitude and not enough fresh fruit.

Roasted Vegetable Salsa

Why buy jarred salsa when making your own is so easy? This is a mild and flavorful salsa recipe perfect for those who find fiery fare a tad too harsh.

Easy Roasted Vegetable Salsa Recipe


This chunky salsa is delicious on grilled fish- or grilled anything, for that matter. And did I mention it's gluten/soy/citrus/milk/egg/nut/sugar free? And if you love more heat, Dear Reader, simply add it in. Or try my spicier Roasted Tomato Salsa. Keep your taste buds happy.

Ingredients:

1 pint (2 cups) of baby plum/grape tomatoes, quartered
3/4 cup corn kernels
1 red pepper, cored, seeded, chopped
1 red or sweet onion, peeled, diced
5-6 garlic cloves, chopped
Extra virgin olive oil, as needed
Sea salt, to taste
1 14-oz can Muir Glen Fire Roasted Tomatoes with Green Chiles
1-2 tablespoons balsamic vinegar, to taste
1/2 teaspoon ground cumin
A squeeze of organic raw agave syrup, to taste
2 tablespoons chopped fresh cilantro

Instructions:

Preheat the oven to 425ºF.

Combine the tomatoes, corn, pepper, onion, garlic, olive oil, and sea salt in a roasting pan and toss to coat. Spread in a single layer.

Roast the veggies in the top third of the oven until the veggies get tender- about 12 minutes.

Spoon into a bowl and set aside to cool.

Add the canned tomatoes, balsamic vinegar, cumin, agave and cilantro. Stir to combine. Taste test and adjust the seasoning to your liking.

Cover and chill for at least an hour to allow the flavors to co-mingle. Co-mingling is good.


Serving Ideas:

Serve as a dip with tortilla chips.

Serve as a condiment with grilled fish, chicken, rice and veggies, enchiladas, tacos, you name it.

Serve as a fresh uncooked sauce for pasta or polenta.
