Best Gluten-Free Pumpkin Bars Recipe

Gluten-Free Goddess Pumpkin Bars

Frosted gluten-free pumpkin bars with a secret ingredient.

Tuning in to the particular (and fleeting) pleasures of each changing season as we ride the wheel of the year may be my favorite spiritual practice. A practice that requires one simple thing. Attention. Which turns out to be not so simple, inevitably. Because life is anything but simple, with its whitewater rush of mind numbing distractions that demand less and less of our soul and more and more of our mental focus on exterior minutia. Micro decisions. Cleaning out our email in-box. Catching up with Facebook feeds and Twitter streams and Google+. Texting about grocery lists. Scanning streaming video options- thousands of choices may glitter and ooze their high definition glow but I find I am not feeling the abundance.

I am less and less enamored with more.

I know. It's showing. My age. My childhood brain was wired for mud and bird calls, blackberry thickets and butterscotch pine. Hours spent reading in a grove of birch trees dug their neural groove. The wild luxuries of inner connection, rather than social networking. And TIME. That plastic, misunderstood, precious commodity that shape-shifts experience from an endless afternoon of liquid daylight into a heart clutching warp speed tumble of confusion. Decades become tiny sandwiches of memory you can barely taste anymore.

Weeks blink by with alarming velocity.

And here we are again.

In pumpkin season.

And so. I stop. And notice the way the late day sun drops low and shimmers golden in the treeline. The crows are gathering earlier. Glossy black and strutting with authority. The smell of burnished leaves scuttling across a wet Cape sidewalk is the same smell I inhaled on a road trip in Vermont fifteen years ago, standing on a wooden bridge above a clear shallow creek while our sons balanced on the slick rocks below us, fishing for smooth round stones.

Do they remember this? Do they remember the same hours I do, in the sand on Skaket Beach? Do they ever have a sudden itch to feed their senses with the scents and sounds of a freshwater riverbed, a sun warmed tide pool? Do they crave a winding path through apple trees? Were their brains hardwired for this connection, too?

I ponder this as I stir a new pumpkin batter.

And breathe in the scents of ginger and cinnamon, listening to the leafy rustle of an almond flour bag as I fold up the cellophane and pinch it closed with a clothespin.

New Quinoa Bars Recipe - Blondie Style

New Quinoa Bars Recipe- with dark chocolate chips, nuts, almond meal (gluten-free)
Our new favorite quinoa bar with almond meal, lots of good vanilla and dark chocolate chips.

A New Quinoa Bar - Blondie Style

A short and sweet post to share a new gluten-free quinoa bar recipe with chocolate chips. It's a Blondie style chocolate chip cookie bar. The quinoa flakes and almond meal add texture, flavor, and protein. Not that I'd go so far as to call it health food. But. As sweet treats go?

This one's mighty tasty.

Quinoa Breakfast Bars with Blueberries

Quinoa breakfast bars with blueberries are gluten free
Quinoa flakes make a delicious gluten-free breakfast bar.

Blueberry Quinoa Bars

For gluten-free folks who prefer to avoid rolled oats (even certified gluten-free oats and oatmeal), I have good news. Quinoa hot cereal flakes are enough like rolled oats that I use them in all kinds of baking recipes. From classic fruit crisps and crumbles, to chewy cookies and cinnamon laced carrot raisin cake, quinoa flakes are a tasty, nutritious alternative to gluten-free oats.

I love the nutty, complex taste quinoa flakes bring to a gluten-free recipe.

I hope you do, too.

Gluten-Free Raspberry Coconut-Almond Bars

Gluten-Free Raspberry Coconut-Almond Bars
Gluten-free almond raspberry bars with coconut are sweet temptation.

Let's Party

Let's be honest. I am here today to tempt you. To coax you. To seduce you with a (gluten-free vegan!) dessert worthy of every single luscious calorie. In full transparency, I am admitting up front these are not fat-free. Or sugar-free. These aren't diet food. They're not proper for breakfast (unless you serve them with Champagne).

And you won't be able to sigh ever-so-wistfully at parties and mention, off hand, how hard it is to eat gluten-free at family gatherings and parties. Because, Darling Reader, you'll score zero sympathy points once people sink their teeth into the luscious raspberry jam filling nestled between buttery toasted coconut-almond crunch topping and tender hazelnut cookie crust. Nope.

In fact, these decadent raspberry coconut-almond bars should come with a warning:

{Be careful who you share these with.
Because they are sure to fall madly in love with you.}

Frosted Carrot Cake Quinoa Bars

Frosted carrot quinoa bars- gluten-free
Frosted carrot quinoa bars. Gluten-free. Dairy-free.

Gettin' Fancy

My intrepid husband slash sous chef was craving a carrot cake style quinoa bar for a mid-morning snack. To be exact, he said, Hey. I'm craving a carrot cake style quinoa breakfast bar. You know. For breakfast. To which yours truly replied, Look who wants to get fancy. My chocolate chip quinoa breakfast bars aren't good enough for you? Now you need frosting? To which said long suffering husband replied, Frosting makes everything better.

Who am I to argue with that?

Gluten-Free Rice Crispy Treats

Gluten-free brown rice crispy treats, GFG style.

Crispy Rice Goodness

Sunday seems to stir up all kinds of sneaky devils and hungry ghosts in the guise of food nostalgia. I dreamed up my last post about Zucchini Gratin on a Sunday, stirring up a bread crumbed casserole of desire fraught with secret emotions and sticky attachments. Food as familial. Food evoking a warm embrace. Food as a way to connect our twenty-one grams of soul to this earth. The ground of being.

I think I know why I'm tip toeing in the garden of nostalgia lately.

My tribe is expanding.

The family my husband and I created when we held hands and promised I do through a veil of mutual tears is now plus one. I have a new daughter-in-law I regard with deep affection. She brings a fresh focus to our four-squared history. And I see us in a slightly altered light, looking at our shared quirks and wrinkles and dreams with renewed optimism. Our clan now feels stronger. Our humble, wacky tribe feels enriched.

And more than a tad sweeter.

Karina's Gluten-Free Quinoa Breakfast Bars

Gluten free quinoa breakfast brownie bars
Gluten-free quinoa breakfast bars, Baby.

Quinoa Breakfast Bars!

We were treatless this week. Specifically, breakfast treatless. No Pear Polenta Muffins were hiding in the freezer. No Apple Cake with Cranberries. In fact, the only food items in the freezer were a solo bottle of organic vodka and a bag of frozen cranberries (does vodka count as food?). Which turned out to be a good thing. Because we had to bake. [Had to!] So we experimented (send smooches to Steve for initiating said experiment; if it were not for him, Dear Reader, you'd be looking at an archived recipe today).

As the breakfast treats were baking I started thinking (always dangerous). I started pondering (even more dangerous) why certain people believe they have things AFO. All Figured Out. And they'll tell you so, of course, spooning out advice in words that taste metallic. Like teeth fillings. They have all the neat little answers for you, judged and predigested, wrapped snug in tidy psychic ribbons.

If only life were that simple.

Don't get me wrong. I'm not yearning for simple.
I'm not six years old.
I can handle complicated. I can chew for hours on ideas that are tough and wiggly and mysterious, and arrive at no final conclusion whatsoever. I can sleep on it and wake up with nothing but songs and dreams in my head that will color the day with glimpses of what might be possible. I don't need to hammer the challenging and mysterious into a mold I can easily grasp so I can feel more comfortable in the world, believing it is fixed. So I can stop asking questions. So I can say, I have the answer.

I am, in fact, okay hanging in the tension of opposites.

I don't need only good, only pretty, only nice, only light, only clean, only sweet, only happy. And isn't that a valuable thing? Because the last time I checked the world was a mash-up of good and bad, beautiful and ugly, gentle and cruel, luminous and dark and cool and filthy and calm and angry and laughable and profoundly, deeply sad. And often, really ironic.

So here's the thing.

The older I get, the more I learn, the less certain I am. Of anything. I don't have all the answers. I don't always know what is best or what is true. And what is right for me may not be right for you. And what may be right for me today may be wrong for me tomorrow.

But one thing I do know?

There are places on this earth where you feel you belong. And places you will always feel like a stranger. An outsider. A tourist. There are places and people and days that grind you down. And harden you. And there are places and people and days that soften you. Soften your heart. And you know what?

I want that.

Chocolate Chip Cookies and Vanilla Blondies

Vanilla blondie? Or chocolate chip cookie Bar? You decide.

First- thank you all for your kind and compassionate wishes for a speedy recovery from emergency hip surgery. Such fabulous readers you are- every one of you. As our Italian friend, Sandra, once said to us- in her dead gorgeous Tuscan accent-

I love you too much!

I feel human again. Yesterday (day nine post-surgery) this sticky, prickly goddess got to sit inside the shower (they make these nifty portable shower seats now) and- Aphrodite-blessed relief!- indulge in twenty sexy minutes of hot steamy bliss. Hawaiian shampoo. Rainbath lather. Leg shaving!

One lesson a broken hip teaches you? It's the little things in life that count. The simple luxury of taking a shower shoots to gold star status- the genuine, beyond spectacular highlight of the day. Pulling on a soft clean shirt? Heaven. Sitting upright, freshly shampooed and moisturized with Eternity lotion? Divine. Twirling pasta in olive oil and garlic- in bed- next to your husband? It doesn't get any better than this.

And then there are chocolate chip cookies (that are egg-free and dairy-free- earning them treasured vegan status). They also happen to be gluten-free, wheat-free, bean-free, soy-free and nut-free. Perfect for all those cute-as-a-button multi-allergic tykes out there. Not to mention, gluten-free vegan goddesses.

Last night Steve helped me make these as cookie bars, in the style of my old tried and true favorite chocolate chip cookie bar recipe- and, Babycakes, they were a damn good match. I named them Vanilla Brownies. My trick was a small cheat. A dab of butter flavor extract. I don't usually turn to artificial flavors (in fact, this is a first for me), but when you are allergic to most natural flavors and buckets of other foods and your taste buds crave a buttery sweet treat, this decidedly un-foodie goddess figures--- Why the Hades not? But if it horrifies you to use it, Darling Reader- and just the very thought of it keeps you up at night worrying about the integrity of the cookie universe- leave it out. It's one quarter of a teaspoon. Sub it with vanilla. Do your thing.

It's all good.

Vegan Coconut Bars

Vegan coconut bars
Chocolate and coconut vegan heaven.

Make it a Coconut Chocolate Treat

Sometimes you just need a treat. A recipe with coconut and chocolate. After all, you've been so good. You've been munching fresh veggies and brown rice. You've been slurping healing soup with cabbage and drinking green tea. You've been diligent checking labels for gluten, casein, and soy. So it's time for something sweet. Something moist and chewy and perfect with a cup of tea.

Egg-free baking is tricky. And at high altitude, even trickier. Truth be told, I've tossed a dozen egg-free experiments into the trash this summer. But these little vegan gems?

These were keepers.
