Gluten-Free Potato Latkes


Nothing beats golden, crispy, lacy latkes.


A gluten-free favorite from the archives- these tender, lacy latkes are easy to make. Serve with homemade applesauce and sour cream spiked with a hint of horseradish or chives. And PS: I just passed my 5th year blog anniversary! Five years blogging gluten-free recipes.

Savory Vegetable Pancakes

I love savory pancakes- shredded veggies add so much flavor.


Savory or sweet? That is my question today- not to indulge in the duality of either/or and divide the pancake universe into opposing sensibilities or anything, but if push comes to shove (and I'm four square against shoving, honestly) the naked truth is I'm more of a savory, salty, golden crunchy pancake lover than a soft, sweet and sticky with maple syrup craver.

Maybe it's because I love pancakes for supper.

Sweet Potato Latkes

Sweet potato latkes and ruby applesauce.


The shortest day of the year is finally upon us. The darkest point in the turning of the seasons will tomorrow tilt toward light. The balance in power has shifted. Daylight gains. The darkness recedes, inch by inch, minute by minute. Light is reborn. Pretty powerful stuff. No wonder so many cultures have celebrated the Winter Solstice in a myriad of ways.

For Hanukkah- no matter how you spell it- it's also about light. An eight day Festival of Lights, in fact, and food is intricately woven into the tradition. Because Hanukkah celebrates the fortuitous finding of a flask of olive oil (a small amount that would, maybe, last a day, but miraculously burned for eight dark nights) recipes for celebrating the miracle of light are cooked in oil.

And that brings to me to one of my all-time favorite foods on Earth.

Latkes.

Gluten-Free Latkes and Cinnamon Applesauce

Have you made latkes lately? 


Latkes are fried potato pancakes made with fresh grated potatoes. Though latkes come in all shapes and sizes (via personal preference) I make my latkes thin and lacy, fried to a crispy golden brown. Oy, these are good! Maybe Mel Gibson wouldn't be such a nudnik, if he tasted these. Although if he did, he'd probably ask for ketchup.
